The Director of the Company is John Cousins, who has been providing independent consultancy and training services for over 20 years. He has over 50 years' experience in the hospitality industry: in line management; training and development; in further and higher education, both as a lecturer and as a senior manager.

With a highly successful track record in consultancy projects, and with over sixty specialist publications, he is recognised by education and industry as an authority on food and beverage operations and hospitality management.

A pioneer of industry based skills competitions, he is also a respected organiser and judge for numerous industry competitions.  In recognition of his high level of commitment to the industry, he received the prestigious Caterer and Hotelkeeper Catey Award for contributions to education and training.
